Living in New Mexico’s high desert, I’m constantly inspired by the succulents and cacti that are native here. This is a Prickly Pear cactus; in October and November, they produce beautiful fruits that vary in color from light pink to dark fuschia. You have to be very careful when picking them because they are covered in very fine hair-like glochids, but are well worth their trouble for the beautiful neon sugary pulp contained within. I’ve used them to make simple syrup, infused tequila, or flavored kombucha! These cacti can be found throughout Albuquerque, and I’m always on the lookout for the most productive ones!
